Symptom
By disabling IIO subsystem, /sys/bus/iio simply doesn't exist, even though laptops' sensors are correctly loaded with firmware and running, consuming battery. This at least breaks GNOME's auto brightness, since it cannot read /sys/bus/iio/xxx. On modern high-end laptops, ALS sensor is a common thing, and IIO is not "unused" like described in copr_script.sh. So, please consider to restore IIO support.
Reproducible on ASUS UX5406SA + GNOME (ALS sensor through Intel ISH Hub). Switching to silverblue's kernel immediately solves the problem but comprises security.
Suggestion
Stop disabling CONFIG_IIO. Maybe compile that as kernel module and add ujust like bluetooth does (or not, leaving that to users in need).
